The "aliasing" you are talking about is an effect in the game, and is there in the original texture, so any texture will have this duplicating effect. It's just more visible in the reworked sky with smaller stars.

While the goal of the project is to "stay as close as possible to the original textures", keyword being "close" here, if someone submits an HD texture where there is no HD texture, if it looks good then it is taken. A lot of the ones you mentioned we're here before I was even a part of this pack. If someone can make a better texture than what we have, then it will be used instead.
If a texture can be improved on over the original, then why not? The darker text in the wiimote buttons for example. Darker text on a light background is more readable, and as for wiimote buttons they look fine. I don't look at them and think "what controller does this even go to?" or "omg this is so hideous compared to the original button". Sometimes we agree on things that don't match, like the strap loader and the save screen icon which are not relevant to the game and look nicer. Font's for example are not always easy to match. I have 65k fonts and sometimes I can spend two hours not finding one that matches well.
Most of the time we just didn't care to remake something that someone already made, as long as it looked good. Those who aren't happy with something are free to express their discontent for it, and if we agree, maybe one of us will fix it. Or better yet, maybe they can help us make better textures.
