Hello, may I understand what changed in the underlying code that prevents the save state from surviving in the new version? Is there a way to make it work? Thanks!

The GameCube and Wii are very complex consoles compared to older ones you may be used to. For older consoles you can just dump memory and pick right back where you left off, but we have to deal with tons of interlocking systems and it is SO much more complicated. Because of this, savestates are very fragile in Dolphin. Any change in Dolphin's underlying code (especially JIT or graphics) will break prior savestates. So any time a developer makes a change that will break prior savestates, they set a new version flag to prevent those states from being loaded incorrectly.
As a user, you should treat savestates in Dolphin as temporary saves, and rely on in-game saves to save progress. For example, use savestates as something to use to push through a tough boss in the moment then save in-game afterwards. If you were overrelying on savestates and need to load it to save progress, the best course of action is to download an older version of Dolphin from our website, such as 5.0-17301 that you mentioned, and in-game save there. By default Dolphin versions share the same saves and settings so you'll be able to pick right back where you left off in the new version! How in-game saves work depends on the game you are playing, and I don't know what game that is. There should be some save menu item or beacon in the world or something that allows you to save. These saves will be stored on the emulated GameCube Memory Card or emulated Wii NAND and will always be compatible between Dolphin versions (and console!)

Like the NES game? NES games usually don't have saves. Is that the full name of the game?

The NES emulator on the Wii will automatically create an NES savestate (which from Dolphin's point of view is an in-game save) when you exit the game. (Not if you force stop Dolphin or cut the power, though.) It will then load it and delete the NES savestate when you start the game the next time.
If you want better savestate support than that, I recommend running the game in an NES emulator instead of in Dolphin. If you're running an NES game in Dolphin, you already have it. It comes with the game when you buy it in the Wii Shop Channel.
