Good afternoon, my wii's disk drive is broken so I have decided to switch to dolphin to run my wii games. I have everything set up but I am having a hard time finding ways to turn my wii discs into iso/dolphin readable files. What do I need to do?

Well the first thing you're going to need is a Wii with a working disk drive. There were some PC disk drives which could run modified firmware to make them understand a Wii disk, but they've not been made for well over a decade, and the used market has entirely dried up, and even when they were available, it was easier to get hold of a Wii and use that.
If you don't want to spend money, it's legal to borrow someone else's Wii, use it to dump backups of the games you own copies of, and then give the Wii back to its owner. You don't need anything off an actual Wii to use Dolphin, just the games themselves. Otherwise, you're going to need to replace your Wii or its disk drive. Once you've got a Wii with a working disk drive, you'll want to install The Homebrew Channel on it, and dump your games using a tool called Cleanrip.
