Just wondering if there's a way of launching a game/quitting back to Dolphin using an XB360 controller, as I'm aiming to set up a gaming station using Steam's Big Picture Mode & would like to include Dolphin & a few other emulators.

It's not possible with Dolphin's interface. However, you can set up big picture mode to launch games and use a 360 controller in that interface. Just search around, there are a lot of threads discussing it.
