I'm not going to list all of them. You can look them up individually. Some games are slower/faster than other games. And different games need different settings to work. Most of the options in dolphin revolve around speed vs. accuracy, where turning the option on is slower but may fix some games that need it. Thus allowing you to achieve optimal speed by turning off the options that a game doesn't need, which is different for every game.
