An option like this would be nice for those who aren't willing to pay for a controller adapter.
It would also be a neat way to implement an 1:1 button scheme for emulated Gamecube games, as users wouldn't need to mind multiple controller profiles and would be able to jump right into a preset one, like what happens when using a Classic Controller for actual Virtual Console games.

The ability to map buttons from physical wiimotes/extensions is a feature I am planning out right now.

If you are using real wii remote or bluetooth passthrough, then the answer is simply because the Wii can't do it. Bluetooth Passthrough literally can never do it, and real wiimote might be able to but no one has wanted to try to do that so, so don't hold your breath! EDIT: Well ok then!

The easiest way to use a classic controller pro as a gamecube controller is to connect your Wii Remote via some other software that exposes the classic controller pro as just another gamepad. You can then map it as a GameCube controller without any trouble! To do that, I'd recommend HID Wiimote. It's made by someone who made a lot of fixes to our Wii Remote code, so we know for a fact that it is excellent!

Do note that Classic Controllers (at least the pro ones for sure) lack pressure sensitive R/L, which means games like Super Mario Sunshine won't work.

The non-pro classic controller has pressure sensitive triggers (with click) just like the GameCube controller.

It appears that you can still find non-pro Classic Controllers off of Ebay, at a pretty cheap price.
And this kind of controller was obviously the one I was referring to.
No reason to suggest support for a controller that wouldn't be able to emulate the native inputs to begin with.
