how well would it work with dolphin and most games, im looking to become more of a portable gamer (switch and this).

Due to its above average cooling solution for the CPU and GPU, and the fact that the hardware is fast, you should have no trouble with the vast majority of games in Dolphin.

I would recommend not to buy the new Dell Inspiron 15 7000 Gaming, due to very poor display quality. Specifically for the FHD models, which includes the $949 model. IMO a poor quality display can be one of the most noticeable flaws in a laptop, and can also defeat some of the purpose of buying a "gaming" laptop: to make games look better (even if it's just Dolphin Tongue)

That CyberPowerPC is an excellent deal. More GTX 1050 / Ti options with good displays include these:
- HP Omen 15: http://store.hp.com/us/en/pdp/Laptops/omen-laptop---15t-x7r21av-1 (don't buy with the UHD display option, it's not true UHD. Get the UHD version of the Inspiron 7567 if you want UHD)

From some of the other reports I was reading, all you have to do is calibrate the screen to achieve proper color properties on that model screen.

I've seen that too. Calibrating can have some effect on the color balance.

But the true underlying issue of the panel is its inability to produce dark blacks. A solid black picture renders instead as a grayish band that changes depending on viewing angle, and the resulting poor contrast produces a 'washed-out' look that color calibration cannot truly account for. It will be particularly evident in darker scenes. IPS displays and good TN displays aren't perfect either, but they're a lot better.
