How would these kind-of 7200u/6200u/6500u/7500u CPU's with d-GPU's like this one Acer 15.6" FHD E5-575G fare in Dolphin emulator concerning light games?

Assuming you can keep the CPU cool, it should be okay for a handful of games.

Looking at Intel's slated chips going forward it does look like they're trying to phase out full powered mobile CPUs from most price points, probably encourage laptop vendors to consider the desktop 35w variants. So you don't have much of a choice honestly.

Yeah, if it's truly run at 2.5~3.0GHz , you will be able play most games just fine
But you may want to wait for the new mobile GTX 1050 or 1050 TI . These new GPUs will be introduced in CES 2017
Unlike the GTX 950M , the mobile GTX 1050 is a full fat desktop chip which is even faster than the GTX 960M
