What is the best performance setting? I mean, im willing to sacrifice graphics for games actually running fast

Almost always, Dolphin will automatically adjust itself to use the fastest settings which won't cause a game to break on a per-game basis. On the occasions where you can make something go faster by meddling with settings, you'll probably find that the game starts crashing, has bugs, or certain mechanics flat-out do not work, rendering it unplayable.

Default settings. The rest is taken care of with game specific INIs shipped with Dolphin as AnyOldName said.
