I'm looking at either getting the dolphin bar or just sticking with a bluetooth adapter with my latest desktop, but I've heard about Dolphin bars having issues plus the length seems pretty small. Will any bluetooth adapter work though? (1 metre)

The Asus BT400 has backwards compatibility with Bluetooth 2.1, so it should be fine. And you are using Windows 10, which thanks to this recent change, has working -TR wiimotes on its MS bluetooth stack! Basically, it would work fine.
You'd still miss out on the other features of the Dolphinbar, though.

Get a Dolphinbar. It's just flat out the easiest way to work with Dolphin and Wiimotes. At least in Windows anyways.
