Do you think this may drastically affect the performance of dolphin on mac? Especially if the processors are custom built quad cores?

It won't make any bigger difference than the same change on any other laptop. Apple use literally the exact same parts for everything as everyone else does these days, excluding in their phones, so any Haswell vs Skylake comparison benchmark will be appropriate here.

Macbook Air+ Dolphin = overheating
There are two Dolphin users reported their Macbook Air hit 90 degree Celsius when running Dolphin
Macbook Pro is likely to be the same
Macbook Pro Retina is a little better (80-85 degree Celsius)
This is what you can expect from a non gaming laptop brand
