I'm Planning on playing:
-Zelda-Twilight Princess
-Wind Waker
-One Piece Unlimited Cruise 1 & 2

Windows 8 64bit
17.3" Full HD Anti-reflective Display (16:9, 1920 x 1080)
NVIDIA GeForce GTX 765M discrete graphics with 2GB GDDR5 VRAM
12GB (8GB+4GB) DDR3 1600MHz system memory
750GB HDD (7200RPM)
Please comment on performance/playability on each game based on Specs and suggestions to achieve maximum speed/fps.

It should be fine (as long as you enable ZTP patch for Hyrule Field).
