Which dolphin revision (if any), and settings are best for a Macbook pro 13"? (my settings and computer specs are in my signature)

There is no best Dolphin version for everything, nor is there any best setting for everything.
The only one who can get the best settings and best Dolphin version for his Macbook pro 13" is you.

dolphin needs just a sandybridge with more than 4ghz
and 99.5% of all games are running @100%

They're tremendously overpriced. Try buying exactly equivalent components, including OSX in order to make it a "hackintosh", so the comparison is fair, and you'll see that you would have been ripped off. If you still want to spend that level of money, you could at least buy a very high end GPU.
