Try starting the renderer in fullscreen mode. Try turning off pixel lighting. Tell me if any of those worked. Also make sure the game doesn't have any weird setting under game properties (like dlist cache turned on). Are your drivers up to date? Are you having issues with pc games or just dolphin?
