hey I would like to know what can I do with dolphin
on my system and which settings should I use to get
best performance in full HD?

my system:
CPU: Core 2 Quad Q6600 - 2,44 gHz (if needed i could overclock it)
Grafic: Nvidia Geforce GTX 260

You need to overclock that cpu. Then it will run dolphin just fine.

and what can I expact from my graficcard?
maybe 2-3 scale and 4xssaa @ 60 fps?

puh... for some games yes... but dont expect it in every game
and not at 1080p
your cpu is the problem, wiht mi i7@2.8ghz default clock its possible to achive 100%
@3.8GHZ nearly everything is running at stable @100%
i didn't tried smg2

you have the same cpu and gpu as me and dolphin runs very well, i have mine overclocked to 3.4GHz though

Your setup is identical to mine except I have my Q6600 running at 3.2GHz. 2x efb scale + 4xSSAA or 3x efb scale + nossaa if fine for any game. Some lighter games are fine with 3x efb scale + 4xSSAA but most aren't.
