Hey guys, heres my set-up

Intel Core 2 Duo 2.6ghz, 6mb l2 cache
Nvidia 8800M GTX
2.5gb ram (4gb installed)

Windows 7 OS

I have an Intel SSD I can use, but I don't want to go through the hassle of setting it up unless there will be performance gains. Also, I can downgrade to a bare bones 64 bit Windows XP if that will help.

What can I do to optimize this for Mario Kart WII?

Your cpu and gpu are both better than mine and I get full speed in MKWii. You should have no problem then.
SSD probably won't improve Dolphin performance a great lot.
Using 64 bit Windows 7? 64 bit build of dolphin is faster.
Are you using the DirectX gfx plugin? It's faster than the OpenGL plugin for most people.
In gfx options, enable EFB copy "to texture" rather than "to ram".

Wow, really? I'm getting 17-20fps in game at best. My settings must be way off.
I'm sorry, umm, where do I get the direct x plugin at?
Nevermind, found it, haha.
post your settings - just as a head start, make EFB copy to Texture is checked.
