I looks like the PS3 HW emulated the old Emotion Engine, Im guessing the software turned all the old GS calls into the new GS call instructions.
Maybe you didn't enable Safe Texture Cache

Lol

xD.
NES can be emulated perfect i think

Nopes, I believe some games use a special MMU that isn't well documented

I still think it's amazing that there has been no record of any computer that runs gauntlet on the n64 at full speed or even half something about that game is extremely hard to emulate, even goldeneye and perfect dark can be played at full speed with the right settings but gauntlet runs badly no matter what settings are used.
Eh.. Gauntlet works good on project64. I tried digging up a thread to support it and found this

I also tried running the game myself, besides the flickering which spontaneously goes on/off it's not unplayable. Sound occassionally disappears though. FPS remains a steady 59-60.
Wouldn't go as far as saying it can be finished & be enjoyed as a game, but it's definitely not unplayable. Even the description says in p64 that it just needs high hardware to run properly.
It has odd video bugs, I gotten to one area, but very slow. Also the CPU Framebuffer emulation is slow and doesn't always work on time, some games use this, you'll will just see a black texture or garbage like in Bomberman 64.
It does have a lot of video problems, in the world right after you leave that area you start of in everything is completely black except for your character, the occasional fence and some other things. Also who made Gauntlet anyway was it Midway because a Wii version of it would be fun i always did like playing through it with another person i always went either Archer or one of the Sorcerer's.
This shows why the people from Dolphin (and of course PCSX@) are the best!
Nothing can compete with a open source project!
