How do I move this data from a Mac to a Windows computer?

You can extract save data from games by right-clicking the game in the main Dolphin window, and clicking `Export Wii Save`. Move the output to your other computer, go to Dolphin, click the `Tools` tab, and select Import Wii Save, then select the data.bin you extracted. That should contain your ghost data and your save data in general.
