I have access to an İMac Mid 2011 with 21.5

Radeon HD 6750M 512MB GDDR5
4 GB 133Mhz DDR 3RAM
How will Wave Race Blue Storm USA perform on this? I have High Sierra.
Should I latest 5.0 Build or dev build?
OpenGL?
How should the settings be like?

Look like you have an i5-2400S as the CPU, which isn't great but isn't terrible. You may have trouble getting fullspeed in more demanding games

Definitely use the latest 5.0 dev builds.

Since the Radeon HD 6750M doesn't support Metal, you're stuck with using Apples terrible OpenGL driver, which is slow and terrible. You'll definitely have problems with this, whic hcould range from not reaching fullspeed to being stuck at native resolutions.

Go ahead and just try out the game and see how it goes, but it may be time to look at getting a better computer with a Haswell/Ryzen or better CPU. You could install Windows through BootCamp, and you'll get access to better DirectX11/12 drivers, but you'll still be limited by your hardware.
