Thank mate, just downloaded. You're right about the controller part but it's still not full screen like the HD version.
It seems like RPCS3/Xenia is the way to go for emulation.

I've used this myself and it looks great at high resolutions.

Nope mate, tried all three pillarbox settings and they stretch the image rather than rendering new things.
When you first time save the game in Peyj's workshop and load back in to it, Jade's right shoe should be visible.
Edit: It also cuts sides compared to XBOX360 HD release. Cable should be more visible on the left.
For textures I guess I could just dump them with Dolphin and uprez them with waifu2x. For the widescreen issue, is there anyway to zoom Dolphin in past the boundaries of the display so that all the unused black space is cropped out?

There is a crop function in dolphin on the advanced graphics tab.
Also have RPCS3 with BGE HD and on my system it runs perfectly up to now, haven't noticed any jarring framedrops (thus running full speed like 95% of the time) or issues except for the random crash here and there but just reload and it should work properly.
