Sorry for the late response, busy weekend!
Ok I'll update below with my testing - I will say which video backend I have used and what dolphins reported framerate is. All other settings are default as is resolution.
Dolphin 5.0 - 8627
Doshin the Giant - Open GL 50fps no glitches Vulkan 50fps but the sky is glitchy (PAL copy so I think 50fps may be full speed on this one)
Luigi's Mansion - Open GL 30fps no glitches but slow down when catching ghosts Vulkan 30 fps but broken flashlight texture
EDIT: Mario Kart DD - Open GL Varies depending on course, slow down with lots of racers on screen. Between 40/60 fps Vulkan full speed, but blue filter over the screen
Twin Snakes - Open GL between 25/30 fps blue filter over codec screen Vulkan 35/40 fps, flickering radar

Pikmin & Pikmin 2 - full speed for both, occasional stuttering but nothing major.

Super Monkey Ball - generally full speed on both but feels smoother on Vulkan, slows down on mini games such as monkey target

Wario World - Generally full 60fps on both, some slow down and audio crackling.
EDIT: Wind Waker - really bad performance on both backends, hovers around 10 fps
I still have Star Fox adventures, time splitters 2 and F-zero to try, and a few EA games if I can track them down from my brother.
I noticed some games (pikmin, wario world) actually ran smoother using Vulkan on my 'overclocked' S8, so as I said before I do think there is performance to be gained if the cpu can be forced to run at a higher speed.
