No, you always need some kind of sensor bar, otherwise the pointer of the Wii Remote won't work.

What sensor bar i have to buy? Currently I have the mayflash sensor bar:

Why it isn't ok for dolphin?
The Mayflash bar should be fine alone, it works as both a bluetooth adapter and a sensor bar (unless the LEDs burn out), it doesn't however work with bluetooth passthrough (but I guess you can still use it as a sensor bar?)
ok i configured the wii remote controller+nunchuk with sensor bar and it works: but in order to play, i have to select Controller Game Cube = None. Otherwiese, the emulator doesn't allow me to use the Remote controller, is it normal?
I quickly configured the emulator with these options:
OPEN GL
Resolution: Native 640x528
Anti-Aliasing: 4xSAA
Anysotropic filter: 4X
My current pc has these specifics: CPU i5 4690K overclocked to 4.2Ghz, nvida GTX 970 G1 Gaming, 8 GB RAM. I think that it is enough to run games with all effects active...but i see that games, some games in particular, glitchy. For example during Tatsunoko vs Capcom, it runs at 60fps but very often it glitchy at 5, 20 fps for a moment.
I tried also with Anti-Aliasing: NONE and Anysotropic filter: 1x. Same issue. So it isn't for sure a performance problem of my pc...
How can i solve this issue?

It's normal in a few games, but not all games.

i tried with Direct3d option, Resolution 3X, Anti-Aliasing 4xSAA and Anysotropic 4X. It seems that in tatsunoko vs capcom the glitch are not so frequent as before, but in Doenkey Kong Country Returns the glitches are still here

Why?
Are they game glitches or graphical? If they're only graphical, try switching back to OpenGL, then try cutting down or even not using AA and AF.

no no, not graphical. There are a serious slowdown during the game, it seems that game "freezes" for about a second during a game session. And it happens with every game i tried. For sure i think that it doesn't depend on my pc because it has enough CPU/GPU/RAM and also becasue it happens also with minimum enhancements settings, both with OpenGL, Direct3d and Vulcan...
Have you tried ripping them again? They isos you ripped might be corrupted...

That could cause infinitely long freezes, but not freezes that last for a second.
