So I tried updating, and suddenly games won’t change resolution and I’m getting crazy audio crackles even with a constnt 60 fps. Any ideas why this is happening?

The standard laundry list of things that could be wrong with your computer in general, please check these:
Are you running the latest GPU drivers?
Is windows up to date?
Is windows power management in high performance mode?
Do you have a high performance profile for Dolphin in the nvidia control panel?
Are you playing with your charger plugged in?
Have you turned off fast boot in one of the windows power options sub-menu things and restarted your computer?
Have you scanned for viruses?
