I installed the update, but the app says "5.0-5730". Was this a mistake, or is this the wrong file somehow?
That's correct. The version of the pull request is different from the app version. But since this is in master now, you should be using the development version from
https://dolphin-emu.org/download/.
Whatever the newest build on that page is is fine.
Alright. So. I did that, and it still shows up as 5730. In fact, any build I try to install that came after 5730 just shows 5730.

Try uninstalling Dolphin, then installing the APK from that page again.
I uninstalled dolphin, deleted every browser cache that might have been goofing it up, and restarted my phone, but it still shows up as 5.0-5730.
This is what I see if I start landscape, then go to portrait and back again. The app stops responding after the first rotation.
