Well we would need a server that supports integrated graphics and from what I can tell the intel Xeon processor which is what most servers run on doesn't have it. I can get and use a linux server no problem but I don't wanna buy another one unless I know it can handle dolphin. 
You don't need one with a iGPU to use Linux.
We've had problems with RDP not enabling CUDA for OpenCV tasks in our lab. What Microsoft does is use some generic GPU driver when using RDP. SO you probably don't need to install a new OS, just use VNC or TeamViewer or some other remote desktop client.
