It is not really threads like you would normally think of with an X86 intel or amd CPU. The main processor of the chip (PPE) is dual threaded (if I am wrong I am sorry it has been years since I studied this) and handles most of the general all purpose work. The other processors are co-processors that are very fast at handling specific data sent specific ways. This is closer to the division of a workload between a CPU and a GPU (though for different instruction) or sound/math co processors you used to get in computers and consoles.

All of this was really fun to mess around with on my PS3 up until Sony pulled the plug
Yeah, I knew it doesn't work as a x86 CPU, I just mean the games for PS3 are made to use all the available resourse of the console when needed, or games like GTA V wouldn't run on a 2005 hardware.

GTA V doesn´t run on 2005 hardware; the minimum requirements all point to 2007's and 2008's.

EDIT: Even if it´s possible to run on older hardware, it wouldn´t be enjoyable at all (and personally I wouldn´t call that "running").

Please, read again what I typed. I'm not talking about PC, I'm talking about PS3. PC version badly run on a 2007 quad-core.
It's not that simple, by targeting a specific set of hardware, you can also optimize for it. I don't think it's all about getting everything out of the console. The BEST looking games on the PS3 probably did that, but, I'd say most of the advantage was just being able to build for a set device.
All I know it that the GTA V devs did a great job there. If the PS3 emulator really uses 8 threads of the CPU, two for the PPE and six for the SPEs, it's possible that these threads won't be tottally used all time, since not all games needs all them. I believe GTA is one of the only games that pushes them all to max, and it's still not enough to keep a constant framerate, I feel like the game runs between 25-30 FPS. Yet, try to emulate PS3 with a quad-core will be like try to emulate PCSX2 or Dolphin with a single-core.
To put things in perspective, the Wii U actually does have multiple CPUs, yet the Cemu emulator still runs all three of them on a single thread. The overheat of keeping the emulated CPUs in sync was so high that it was actually slower to run each of them on a separate core. Using multiple cores only works for threads that don't need to share information with each other or run at exactly the same time.
