If this was to me, I thought the new dolphin bar already came updated.. So I still have to do this ?

updating the dolphinbar on my pc worked and then connected back on Shield works now too ! Thank you.
GC games run really well but Wii games, not so much.
My install is pretty much stock, latest dev build (at least a few weeks old). Any settings off the bat that can improve wii games ?

I guess you're talking about the performance? You can hack the emulated system by underclocking it, which will make it easier to emulate, but it will randomly break games as well.
Else, a better CPU? Keep in mind that the Shield is still a low-power device.
