The video driver has bugs in it that causes massive graphical issues on this device.
It is fixed in newer graphics driver versions.
There is nothing that you can do to fix this on your SGS6 and SGS6 Edge.
Will Dolphin ever have a release that fix the issues?

Considering it's the device's own driver at fault, I wouldn't think so
So it is imposible to use dolphin with the marshmallow update?

Not necessarily. The newest version of Dolphin that works with the Galaxy S6 currently is 4.0-9075. I went through a lot of trial and error to find that out!

Get that version in the build table here.

Any version past that doesn't display the graphics correctly. I wonder what changed between versions here to break the S6's video output like that, and if there is a way for a workaround...

I am trying to install that version on my S6 but it just tells me the app is not installed. Do you have any idea what the reason would be?

That means you already have a dolphin build installed and it can't rewrite itself, meaning you would have to delete the build you already have installed, so you might want to back up your dolphin-emu saves if they are important.
Anyone has tried dolphin with nougat update? im having the same problems, maybe is a bad configuration
I hear yah I have a note 5 and I got massive graphical glitches. There probable just going to tell you it's your device not the emulator. Be warned it's not entirely true. As the older versions that I can't find any more did work. Just be patient and hope that the real developers hear us and try to work out the issues what ever they truly are.

Yes it works fine on my s 7 edge before it bit the ghost. But be aware that on android 7.0 or higher the emulator doesn not create the appropriate folders for the emulator after installing the apk. You must do this manually for some odd reason.
