You could try playing this on an older version of Dolphin that allows Wii remotes on netplay.

I have mainly used version 4.0-6502 for Wii remote netplay, but on that version, the players all need the same save file or else it will desync. Any newer versions than that, such as 4.0-6885 and 4.0-8059 disable save files so you wouldn't need to worry about that if you use one of those two. Unless you want to save your progress, I would suggest going with 4.0-6885 despite it being the older version. To actually play online, the host of the game will want to turn on Wii remote 1 in the netplay controller configuration window, but should stick with a Gamecube controller in the game itself if that is an option and allow Wii remote 1 to eventually turn off from inactivity. Note that if the Wii remote turns back on after inactivity, that could cause a desync, so no buttons should be pressed on the Wii remote once past the menus. I have played the game Dokapon Kingdom online using just Wii remote 1 for the same reason you want to here, but I haven't tested this specific game doing that. I think it should likely work, though.
To be fair, wiimote netplay was disabled because no one could get it to work.

You're welcome. Let me know how it turns out. I might still be able to come up with something if you run into any problems. One other small possibly unimportant detail is to keep the nunchuk turned off when trying it out.

we tried .6502 and it desynced, we tried .6885 and it works great with emulated wiimotes

I'm thinking that .6502 might also have the potential to work, but the save files could have been causing a problem. Still, if 6885 works for you, then that's great.

there is a bit of a problem however, it seems we can't find a way to use save files at all on 6885
we synced our save files via dropbox and it just made us start a new one, so we did and saved the new one but it was gone next time we tried to play
