An i7 isn't going to help you all that much in general computer usage. It's just nice to have the extra threads every now and then. It won't help you at all in Dolphin anymore than a 6600k would.

So yeah. Take my build, knock out the GPU, and add your own case. Done. Much cheaper too.

What do you mean "extra threads now and then"? Shouldn't I try to have them more often then not? Sorry, it's been a long time since I went CPU shopping. And if I get the 6600k you'd better believe I'd overclock it. Sorry for being such a noob, it's been a few years. And the whole Core i5/i7 thing just made me unsure if 4 threads was enough for high end gaming, or if I should go with a Xeon (which yes I understand it may not be as good in Dolphin, but would it be better for other uses? And if so, would it be something you'd suggest?).
"every now and then" was poor wording on my part. It does show some measurable performance increases for very modern games (games released in like, the past year or so). If you want future proofed high end gaming, spend the extra $100-$120 or so and get an i7.

I went ahead and got more RAM and put an SSD instead of a HDD, I just got a new one not long ago. This is the list I came up, does it still look good?

I'm always partial to a good Samsung SSD, but that's just my preference.
Since you said you want to do video rendering for Youtube, that i7 will be the best, as it has 4 cores with 8 threads clocked at 4.0 Ghz, which means video rendering will be super fast and Dolphin/games will play smoothly.
Everything else looks really good and should allow for a great base platform for years to come.
Most of the time those fancy numbers samsung is the king of mean nothing the user is going to care about (They may notice the Samsung is a tiny bit faster) unless they're *constantly* reading and writing either very large files or very small files, all the time.
That is a really high end system. Should be fine for whatever you want to do. btw I picked the CRYORIG cooler because it's coming to be sort of the replacement of the 212 EVO. Performs a little better. Not by much, but eh. tbh I have a 212 EVO and it performs just fine with a bit of an overclock.

Ah, well I've heard good things about it, and my friends who are IT guys, explain it's their "Go-to cooler", but I may be willing to try the Cryorig one. So this is definitely one of the better rigs eh? I've been stuck using the rig below for far too long, slowly upgrading it to whats on my profile now. Trust me, I felt like a god buying it at the time, now I feel like the butt of a bad joke.

So when you say "years to come" how long do you think it'll be before I need to upgrade to something better?

You may need to upgrade the GPu after a few years, but everything else should be fine for way longer. Individual use is up to you.
