So I have been testing out MSI and it looks good but I cant figure out how to get the file size to stay below a gig for a 5 minute video did an 11 minute video of RS3 just now and it was 36 gigs!!

That's because it's RAW, uncompressed video. You can convert it to a compressed format afterwards, for example H.264 in a mp4 container. Handbrake is one software capable of that.

What ^ said. You should encode it with x264 at a smaller bitrate when you're done editing. Otherwise, if you don't mind using compressed video, then you can setup x264 and use that. Play around and see what works best for you. Oh you can also use your CPU with Intel Quicksync to record your videos. Haven't used it but to set it up, go to video capture and select external plugin as your video format. Click the "..." next to it and select Intel QuickSync and configure it.

Dolphin's built in tools work best by far, because it will always record at the proper speed, even if the emulator runs faster or slower.
