It apparently only requires a wiimote for this one very specific thing. I'll try to make my mouse emulate a wiimote and we'll see if I have any success with that. If anyone has good keyconfig ideas for that it would be neat if you shared.
EDIT: So I did some prancing around with making the wiimote emulated by my mouse. Originally I just added the options to the first control group but it made my controller not transmit any more (since I had to change the group to keyboard + mouse) so I added a second emulated wiimote. Sadly it doesn't work, not sure if the second wiimote is technically not doing anything in game (as in not connected) or my setup is wrong. here are images for the setup. If someone has ideas than feel free to share.

I know that older versions of dolphin apparently had the "click for wiimote" option hardwired and now you have to set it up yourself. I've tried setting it up like posted above, but even when I turn on the other wiimote in game it doesn't do anything. And If I try to config the first one with that and the classic controller at the same time, than neither work.
You probably do have to set it up with Wii Remote 1. They didn't work before because you changed the Device to your 'pad, and naturally Dolphin's gonna stupidly assume that all your inputs are from the same device unless you specify that some inputs are from a different device.
tl;dr, set up the CC as normal (set Device to the 'pad), then right-click each button for the mouse controls and set the Device at the top of that subwindow to the DInput Keyboard/Mouse, then choose a control in the list and click "Select". (Also, don't choose the Axis controls for mousing with, choose the Cursor ones. Otherwise it'll keep snapping to center, which obviously doesn't work well.)

Sorry about the delayed answer but I had a lot of work in the last few days. Anyway I eventually got it working thanks to your suggestion. I tried binding to keys on the keyboard but the digital input just didn't work properly and it would get centred regardless. Direct mouse axis did the same thing.
Eventually I noticed cursor axis at the bottom of the list and that worked perfectly. It's clunky as hell but it works.
So thank you for your answer and maybe I can finally dig into monster hunter!
