masterdragon, I think the words you're looking for are "vivid" or "striking" graphics, something that you find immediately visually stimulating, pleasing, and perhaps inspiring. Even so, that's still a pretty broad category :/
Perhaps you should try limiting it to certain topics or settings? Do you want cosmic starscapes? Sweeping vistas of the earth? Cities? Abandoned wastelands? Natural stuff or industrial man-made things? Ethereal mind-bending spirit realms? (Okay, that last one's a tad too much :p) Usually categories help people think something along the lines "Oh hey, that game I played last summer has some pretty cool levels".
For games with striking visuals, I'll definitely toss Xenoblade out there, and just about any of the Forerunner worlds from Halo (seriously, back in 2001, looking "up" in Halo:CE and you saw the rest of Halo was sweet

). If you're into "cute" things, Little Big Planet.
But... if you really,
really want something trippy, feast your eyes on Polynomial. It's a game on Steam; I'd recommend it:

Natural stuffs, about nature landscapes and so. But not like post apocalyptic, or with dark visual (except about Universe, it counts).
Striking Visuals on nature elements, guess thats it then.
I took a look on Xenoblade, seems nice.
But, unfortunately, xenoblade has no release to PC, has it?
And i guess ill not be able to play on dolphin, cuz of my big issue that i have posted here:

You can play it on PC via Dolphin , can't you ?
Overclock your CPU @ 3.6GHz and use Dolphin 3.5 145 then maybe your PC can run this game full speed

Thats not the case, im running my CPU at 4.0GHz (3.99) and memory 1066MHz (1064MHz).

PC games with big landscapes and bright/wide color pallets colors that immediately come to mind:
Farcry 3
The Elder scrolls series (at least the fully 3D ones, morrowind, oblivion, and skyrim)
The witcher series
The mass effect series (mainly me1)
Dare I say it.....minecraft
There are a lot more that I can think of with darker color pallets.
The elder scrolls series is well known for focusing on this so I would start there.
