I'd like to know if there is a way to play online with the dolphin as it happens with MAME Kaillera +.
There are servers for online gaming with compatible titles?
The emulator emulates only the function of BBA Nintendo (GameCube)
Or even that of classic multiplayer?

Netplay currently works on all GC games that have multiplayer; they do not need to have any kind of online functionality in the game. Super Smash Bros Melee, for instance, can be played online.
Near future will have wii support; it's being tested/worked on right now:

Is there a way to know which rooms are online and play with strangers? As with MAME?
There are no rooms, it is direct connect
