For Sorcerer's Stone go into Properties (right-click your game) and check MMU Speed Hack
Harry Potter games are really that demanding? That's a shame. I tried the MMU speed hack and it works a bit better now. The audio is out of sync in cutscenes but at least I can play it. It is not smooth by any stretch though.

The good news is that Metroid Prime chugs along smoothly and so does Wind Waker and Ty the Tasmanian Tiger (with issues in cutscenes again). Are EA games just generally demanding on Dolphin?
Did you try LLE?

Harry Potter says this:

"Failed to load DSP ROM:

This file is required to use DSP LLE.
It is not included with Dolphin as it contains copyrighted data.
Use DSPSpy to dump the file from your physical console.

You may use the DSP HLE engine which does not require ROM dumps.
(Choose it from the "Audio" tab of the configuration dialog."

Can I manually add DSP LLE?

Hm, did you mean DSP LLE on Thread? Because that does seem to work for Harry Potter SS at least. PoP still has problems with sound though and is completely quiet if I have that option selected.

They are.

Moreover they used to have sound issues that required LLE. HLE rewrite (by delroth) solves 95% of them

Use latest builds. A free DSP rom is provided.

You can of course use your own dumps

3.5 isn't the latest build?

3.5 is the latest Stable version.

The latest build (Development version) is 3.5-1729. You'll find latest builds here

Alright I will try that. I am having some success with
DSP LLE on Thread so far. HP PoP and Everything or Nothing is still without dialogue but at least some games are working better with it.
And if you want the real DSP from your wii you can find out how here:
