If i update to a new version of dolphin will be my savegames deleted?

Or, instead, just drag your User folder from the old build to the new one to transfer ALL your stuff.

If by "savegames" you mean in-game saves (Memory Cards or Wii saves) then you'll be able to transfer them easily. If you mean save states then you'll be less lucky...
