I'd only be playing GameCube games, specifically SSBM through
Netplay and eventually
SSBMO when that project is complete.

Basically, I'm looking to buy a new laptop to replace my old-and-almost-dead current one. Not very knowledgeable in laptop specs, so some help looking in the right direction would be appreciated if the one I linked to can't get it done. My budget is tentatively ~$800 and a desktop is not an option.

Netplay = disable dual core = run dolphin in single core mode
That CPU won't cut it . I recommend gaming laptop (with Dual Fansink) for Dolphin , multimedia laptop(single fansink for both CPU and GPU) might overheat . Since your budget is very low , so you have no other choice than multimedia laptop

17" laptop : big , more space -> less heat , i5 run cool but it's slower , mid range GPU (1080p)
15" laptop : medium ,less space -> more heat , i7 run hot but it's faster , same

Hmmm okay. Can you recommend me one that has Windows 7?
If I expanded my budget, how would either of these compare to the previous two in terms of Dolphin performance?

i3/i5/i7 2XXXM is 2nd generation Sandy Bridge mobile CPU (2011)
i3/i5/i7 3XXXM is 3rd generation Ivy Bridge mobile CPU (2012)
Ivy > Sandy

New line laptops (include new CPU , new GPU) come with Windows 8 . You want an outdated laptop ?
If you don't like Windows 8 , you can uninstall it

Neither of them could be added to my list . Reason :
_The 2nd one is a multi-media laptop with a weakest GPU + high price + i7 -> Run hot and maybe overheat
_The 1st one has a weaker CPU + high price , good cooling though its cooling design is no match with gaming laptop cooling
i7 3610QM >= i7 3632QM (the difference in speed is very small , not noticable)
i7 3632QM > i5 3210M > i5 2450M
Nvidia GT 640M > Nvidia GT 635M > AMD 6750M > Nvidia GT 630M
I found
this sager gaming laptop
You can customize it to your liking . For the best cooling you should choose :
_ IC Diamond Thermal Compound
_ COPPER COOLING UPGRADE - Extra Cooling Copper Heatsinks
Total cost : 827$
