Game is finally running, what a blast!
But I have a little graphical bug in the main menu, seems to be a texture problem of some kind?
Is this a known issue, is there any solution to this?

I don't have that issue, perhaps try older versions (to what limit it boots...) because, unless it's a regression it could be something with your drivers.
This game will not run well for me at all. Using MMU on dolphin 5.0-920. Resolution doesn't affect my performance at all and on the first mission I get massive stuttering at the hellfire droids part. I am using an AMD 8350 and GTX 980 SC, shouldn't I be able to run this game at 4k 60fps?

Bad CPU for emulation unfortunately. Overclock it tremendously and it might get a little bit better.
I've seen a lot of people saying that this game runs full speed easily. I'm having a bit of an issue with this.
Before I used to run this game on an i5-4460 and I just assumed my cpu wasn't good enough to emulate the game properly.
I have since upgraded my pc, and it has the following:
Ryzen 7 3700x
16GB Corsair vengeance 3600 with a +200mhz oc
Zotac GTX 1060 6gb
Window 10 64bit
When playing the game I use mission 10 "The liberation of Kashyyyk" for testing as it seems to be the hardest mission to run. I have tried every video back end and every shader option. I've had the best luck with DX11 with these settings
I have a video of me running the game on Xbox for speed comparison, Followed by OpenGL, then DX11, then running the first level of the game with dx11 but experiencing no slowdown.

If you have the game and want to see if you get a similar experience use the cheat code (gasmask) to unlock all the levels.
Any advice on speeding this up would be great. I want to get back into speedrunning this game but my xbox has a ton of issues running in general, keeping me from playing.
Is there any particular reason to use Skip Drawing instead of Async Ubershaders?
Not in particular, The lag persist with either option. It gets way worse with regular ubershaders, making me believe it may be an issue with the graphics side of things.
