I tried messing with with the configuration for a long time, however I wasn't able to make shading behave normal.
What I get is a weird texture discriminating shading like on the screenshot below:

It's a Mac specific issue. There's nothing you can do

Mac or OpenGL specific? If it's the first I could try on debian. If it's the second I have to force myself to wait until Windows boots.
It's related to nvidia's shitty macosx drivers. Debian will work fine.

You should preferably use Dolphin 3.5 (more recent, more accurate, more anything you want Tongue ) but Dolphin 3.0 is just fine for this game.

If you use 3.5: set Framelimit to "Audio".
If you use 3.0: set Framelimit to "Off" + enable Audio Throttle (DSP settings).

Btw Audio Throttle shouldn't even be necessary if you use LLE

i am experiencing some sound lag (sound plays 1-2sec. after they should be).
using the 3.0 solution.
-no framelimit, audio throttle, LEE recompiler

You can try to set your Framelimit to "Auto"

stable 50fps
~65% on all 4 cores
still overclock ? i guess its some other issue but i can be wrong. since my CPU is not much in use
That's because you have a quad core cpu. Dolphin only uses 2 cores at a time (mostly). At 65% load you are maxing out your cpu.
