I have a wii and dolphin. i prefer using dolphin because it has better graphics. I used to also have the crashing issue. did you try using a lower resolution? and FPS do you have when you are playing the game?

Jhonn already gave the correct solution to this particular issue. Use a recent build from the wii-network branch.

Just use the latest build from wii-network branch and the crashes won't occur (even on HLE)...

In the future, builds will be available at http://dolphin-emu.org/download. For now, you'll have to rely on unofficial builds like this one: http://www.emucr.com/2012/05/dolphin-wii-network-git-30-712.html?m=1
