But i've read a i5-2500k is better for gaming, but thats a i7 K edition, so it should run better.

Should be possible, your GPU is definetely able to handle this.
I've deactivated hyperthreading 'cause I've heard that it could be advantageous if you want to use dolphin!?

Nope. HyperThreading won't influcene the performance (neither positive, nor negative).
Activate it and check "Lock Threads to Cores" in Dolphin.
I haven't got a cpu cooler yet.(except the intel boxed cooler)
When I'm playing super mario galaxy for example with LLE
the cpu-temperature goes up to 90-110°C.(I've overclocked my cpu to 4,5 GHz)
Are these temperatures too high?And if yes what cooler you can recommend me?
They are waaay too high, for what I've seen in the last 4 days, people get 51º~65º C in a i5-2500k @ 4.5 Ghz with a Thermaltake cooling system, and some other models.
