"Real" motion plus works. Some Wii extensions such as UDraw, Skateboard... are not emulated.
The guide you mentioned for LLE is an excellent one by @ED2. Use it
Note: Dolphin is not a real Wii and can't replace a real one.

If you want to play ALL games with NO problems IN 480p, use a Wii.
If you want to play NEARLY ALL games with SOME problems IN 720p/1080p+AA+AF, use Dolphin.

You should also factor into your decision the fact that you need an expensive nearly top of the line system just to make most games playable. Whereas a used wii is dirt cheap. And no matter how good your system is there will always be a few games on your list that are unplayable either due to extremely bad performance or crashing.
Thanks for the help everyone; I'm going to go ahead and buy the things I need to get my controllers to work with Dolphin and skip getting a replacement Wii until I absolutely need one (well, as much as you could actually need a Wii at least.

Just to make sure, these will work with Dolphin, right?

Emulators are never illegal. You can sell your wii in favor of using dolphin, and it will still be legal. Even if you have never owned a wii, it'd still be legal.
At this point I'd never pick the real thing over a good emulator. If a game is not working properly on the emulator, I'd just move on to the next game that I enjoy playing (it'll work eventually). After playing these games at high resolutions, I could never go back to games looking like crap.
