The games are probably defaulting to EFB to RAM. Open the graphics config while in the game and then close it to enable the current settings.
EFB to RAM doesn't slow you down that much. There's more going on here.

I'll be more specific. Monitor those temperatures when you play Skyward Sword and Mario Galaxy.
Make sure you leave the game on for a few minutes to see how high they get.
Download GPU-Z and check if your GPU exits the 'idle' clocks of your GPU.
So, GPU Load is at 80/90% so yes my GPU exits the idle clocks. 40°C
25% of CPU.
SS runs at 19FPS with 60% Speed actually.

EDIT : Oh and when I close the game with the latest build, an error occured (Dolphin stop to work)

There's definitely something wrong...
What about other Dolphin revisions?
If nothing is working and we all know you should be getting better speeds, there is something on your end that is wrong not related to Dolphin. I guess you'll have to figure it out on your own somehow.
