Wait, so you bought this game, the box was in English (US, EU, or AU) but the disc was in Japanese? Sounds like you're short on luck. Usually, when publishers, e.g. Nintendo, put out a Japanese release, the language is strictly Japanese only. When they release it internationally, then it gets translated. Sometimes they translate it beforehand and just release it internationally with different menus, manuals, text, etc.
You should probably take the disc back from wherever you got it and ask for an English replacement. Failing that, learn Japanese. The grammar's not too difficult, and the writing system's pretty efficient once you get used to it. :p

Well, it's easy.
You have to access the hex data and change every character to an english one.

The region converter only convert the registered region, not what languages are in the game (the flag in the Dolphin game list indicate what region it's from).
Japanese region games (white rectangle with red circle in middle) usually don't have English language, because the English translation is usually done by NoA or NoE

Yeah, you can't just expect it to translate it--wait.
Google Translate + Wii game = translator program. It should happen...but it'd have too many issues. How would it know what is text?
