I used followed the guideline of settings at the top of the page, but they are a bit outdated, so I did the best I could.

GC games work fine, its the Wii ones i'm having trouble with.
I have tried to play a few games, they run fine at the start, but just go into a slow-motion like state once i start playing them.

My system specs are

Q6600@2.4ghz
Nvidia GTS450
4gbs Ram
You can't get great speed with your system. Slow for Wii games but good for GC games yes

So its as simple as system specs then?
The fps rate will sit at 30 or so during play, which is around the same as what the gamecube games do.
Everything runs smooth, just at like 75% speed.

Dolphin runs best on a computer with a multi-core processor and a graphics card that supports OpenGL/DirectX, Pixel Shader 2.0, and OpenCL. Preferable graphics cards are those manufactured by Nvidia or ATI.[22] Dolphin is able to accept input from a mouse, keyboard, joypad, joystick, Wii Remote, and microphone.

Operating System: Microsoft Windows (XP/Vista/7) / Linux / Apple Mac OS X (Intel version)
CPU: Pentium 4 or Athlon 64 with SSE2
GPU: OpenGL 2.1 or DirectX 9.0c compatible[22]

Those are the minimum system specs I found, and mine vastly exceed those.
It can depend of which game you're playing too
Your CPU clock must be too low. Overclock it, the Q6600 can go quite far.
