Yup, this is gonna be my build (building it in a couple weeks) too, although I'm debating if I should get an i7-2600k or an i5-2500k and spend the extra money on more RAM.
2600k is a good future proofing measure if you're not hard pressed for money, but its benefits against the 2500k are minimal at best for gaming and emulation. You're not going to get much extra out it unless you do a lot of video encoding, or until games start supporting more than four threads.

Go for the 2600K - you can get extra RAM for a ton cheaper then you will a new CPU down the line
The performance benefit for emulation as of yet won't be dramatic - unless you go for overclocking. Then again, don't build a new PC purely for emulation, that's a bit of a suckers bet.

You do not need more than 4GB (anything more is overkill[usually, depends on what you do]).
It's going to be a nice and well built rig without a doubt.
2600K is a great choice!! Ha ha if you were to get a HD 6950 also then we would have a similar setup.
