I'm not going to list all of them. You can look them up individually. Some games are slower/faster than other games. And different games need different settings to work. Most of the options in dolphin revolve around speed vs. accuracy, where turning the option on is slower but may fix some games that need it. Thus allowing you to achieve optimal speed by turning off the options that a game doesn't need, which is different for every game.
LLE recompiler audio and copy efb to ram are two common settings that will usually keep you from running a game at full speed all the time without an i5/i7 (especially when you're using BOTH of them).
Aside from comparability with certain games (like Super Mario Sunshine), what's the benefit of EFB copy to ram?

Once again.
It depends on the game. Some games work perfectly without it. Some games need it (very few). And many games have issues without it.
Out of the games I have for example:
Metroid Prime: needs it in order for x-ray/thermal visors to work (game cannot be completed without it)
Metroid Prime 2: Needs it in order for the dark/echo visors to work (game cannot be completed without it)
Metroid Prime 3: Needs it for the scan/x-ray visors to work and proably other things (game cannot be completed without it)
Twilight Princess: Needs it for the mini-map and dungeon maps to be in color instead of black and white (game can be completed without it but this is extremely helpful for finding your way around in dungeons)
Wind Waker: Needs it to take pictures with the pictograph and maybe other things (game can be completed without it, but some side quests need this)
Pikmin 2: Doesn't need it
Donkey kong country returns: Doesn't need it
New super mario bros: Spinning coins, block animations, and blue coins are broken without it (game can be completed without it)
Super Mario Galaxy: Doesn't need it
Super Mario Galaxy 2: Doesn't need it
