Sounds like the old "Lucent Winmodem" problem: the software has to do things that the hardware should do.
Did you managed your problem? I have exactly the same problem... I'm using a cheap bluetooth dongle but I think this one is able to handle with a wiimote. I'm also using the bluesoleilsoftware which was provided for this dongle... How can I use windows stack for win7? I tried to deinstall the bluesoleil-crap but didn't manage to connect wit the wiimote.

Well.. this is class 3. With 1 wiimote and nunchuck(+motion plus) works perfect. It it works with 2 wiimotes + nunchuck u re so lucky.
