Yes, In the wiimote plugins use the "Emulated Wiimote" Input Source.

if so , then which works better ? (speed , sounds , etc ...)

gamecube version by far.
i have tried both versions and gc is almost twic e as fast for me :O
sound/graphics etc is in both version 100% good nothing wrong with it.. the only thing is that in the gc version the ''select file'' melody is a bit loouder then the music playing in the background but nothing to writ home about.

foir wii config you can use the new wiiplugin (found in newer revisions) there you can set values and stuff to your liking and also the newer features are the trhust in and pull out options (like in the beginning of metroid prime 3 for example)
you can set the nunchuck on your left stik and the cursor to the right (you can now control this with your right stick instead of the mouse pointer in the new plugin)
then x = a
square = b
triangle = either plus or minus
circle = either plus or minus
start is 1
select is 2
and so forth

isnt really usefull because i hav button 2 at the bottom and you may have button 2 at the top sooo... that is a no go xD

ok ... ther'r some wii remote's buttons i can't know how they work !! like :
1 , 2 , + , - , roll right, roll left , pitch up , pitch down , home , shake ...
i mean which buttons in my pad i can replace them with ?
and what about "Classic Controller" found in wii remote setup ?

It sounds like you are using an old Dolphin version.
I'd get a recent svn build from: http://www.dolphin-emu.org/download.html
Wiimote configuration should be easier then.
