eyefinity is where you use more than 1 display.

ya, crossfire is when you use the bridge to connect 2 or more gpus (but dual cards can be natively in xf too)
Though some cards like in that zelda dolphin vid support 6 displays natively on 1 card.

I searched online and to bypass hardware limitations,
there is a sick 5970 edition that allows 12 displays to be hooked up.

1920x1080 doesn't show up in the Display Resolution tab. The highest I can set the resolution to is 1280x800. Does that mean my laptop doesn't support it? I wrote it in the Window Size is that ok? I uploaded a pic.
Monitor must support FullHD in order to display 1920x1080.My 16' monitor only up to 1440x900
Right-click on windows - "screen resolution"

Ok so does that mean my PC games won't play in HD since my resolution is too small? My graphics card is ATI Radeon 3200 HD. Will 3D gaming show the same even though it's not Full HD? How about HD video's?
Not a chance ,your video card is too weak. It's not even a real graphic card,it's onboard (share memory).Don't dream about FullHD even HQ (800x600) have slowdown alot.Ati 3200 is used for watching HD movie up to 720p ,not for gaming
You should set Dolphin's resolution 640x480
Ok but I plan on getting a new laptop the graphics card is Nvidia Geforce GTX 260M. Would that be able to play games in HD? How about 3D gaming? The resolution is 1366x768.

ugh, 1080p is 1920*1080? Are you in grade 2 or something? Simple math tells you that your resolution is not high enough. It doesn't matter what graphic card you get, if the resolution of the screen does not support 1920*1080, it will not play in hd.

Your talking about 1080p, which is not the same as hd. High Definition just refers to any resolution greater than 720 x 480. For example 576p is HD, so is 2160p. 1366 x 768 might not be 1080p but it's still HD. Besides that's the standard resolution for "720p" hdtvs. 1080p is just one of many resolutions that are "HD". Right now we call it "full HD" because it's the highest resolution that mainstream televisions support. Once 2160p televisions become mainstream they will become "full HD".

Are you talking about 3D rendering or stereoscopic 3D? I have a feeling your talking about stereoscopic which in that case the answer is no. Plus dolphin doesn't support stereoscopic and very few displays are stereoscopic capable, only a couple of laptops have stereoscopic capable displays.
